Vazhaithandu Pachadi 

The vazhaithandu pachadi is a healthy recipe with banana stem added raw to yogurt and seasoned with mustard seed.  Banana stem is also known as vazhaithandu in Tamilnadu and is super nutritious root to have.  This is also diabetic friendly. Vazhaithandu is very rich in fiber and when combined with yogurt is great for stomach ailments.

Ingredients

  • 1 cup banana stem, cut into small pieces (remove the outer thick skin before cutting).
  •  2 cups curd, whisked
  • 1 or 2 green chillies
  • ½ tsp mustard seed
  • 1 tsp white urad dal split
  • 1 spring curry leaves, finely  chopped
  • Salt to taste
  • Cooking oil for seasoning

Method

  1. To begin with the vazhaithandu pachadi, we will first whisk the yogurt with salt.
  2. Add the diced vazhaithandu in the whisked yogurt and keep aside.
  3. Heat ½ teaspoon oil in a small pan; add the mustard seeds and urad dal.  Allow the seeds to crackle and the dal to roast until brown.  Once they crackle and turn brown add in the green chillies and curry leaves and stir for few seconds.
  4.  Add the seasonings into the vazhaithandu yogurt mixture and give it a good stir. Check the level of salt and adjust to suit your taste.
  5.  The vazhaithandu pachadi is now ready to be served.  Since its rich in fiber it will keep you filled and satisfied as well.
