Chinese Potato Halwa



Ingredients



  •  Koorkai / chinese potato 500 gms
  • Sugar 450 gms
  • Butter 50 gms
  • Strawberry puree 1/4 cup
  • Roasted cashew nuts chopped a few.
  • icecream  cone 2 
  • Roasted badam chopped
  • unsalted pistachio chopped 

Method


  • Wash the chinese potato thoroughly and pressure cook the same for four whistle.  Allow the pressure to come down completely.  
  • Once cooled completely remove the skin and mash it using a blender.  Do not add water. 
  • Add one tablespoon of butter in a heavy bottomed pan.  Add the koorkai/chinese potato and give it a nice stir for two minutes.  Now add the sugar, and strawberry puree and mix well.  allow the mix to cook for five minutes.  Stir it occasionally.
  • Keep adding butter at regular interval to keep it moist.
  • Add the cashew nuts to the halwa and mix well.
  • After 10 to 15 minutes you will see that the halwa will become glossy, come together and will not stick to the bottom.  This indicates that the halwa is done.
  • Fill the koorkai halwa inside the cone and decorate it with the chopped badam and pistachio
  •  Enjoy this unique koorkai halwa with family and friends.
